Here you go, Val.

Mock Crab Cakes

Ingredients:

2 cups grated zucchini

2 large eggs -- beaten

1 cup fine dry breadcrumbs

3 green onions -- chopped

2 teaspoons Old Bay seasoning

1 teaspoon mayonnaise

vegetable oil

tartar sauce

Directions:

Drain zucchini, pressing between layers

of paper towels. Combine zucchini and

next 5 ingredients in a bowl. Shape mixture

into 8 patties (mixture will be soft).

Pour oil to depth of 1/2 inch into a large

heavy skillet. Fry patties in hot oil over

medium-high heat 2 minutes on each side.

Drain on paper towels; serve with tartar

sauce.

Just a reminder to all members that our shared recipes are stored perminently in

our files

here:

You can also type in a search of our past messages

in a search field at the top of the group's page;

so if you want say a recipe for Cole Slaw, type that

in the search field, then click search and all of the

past messages from the group that mention the

word cole slaw will appear. Pretty cool, huh?

Makes searching for recipe that we have shared

very easy. Our group is older and only allows

so much space for archived messages, so we file the

recipes as an added back-up.
