Peel beet(s) and cut in 1/2 " cubes Toss with olive oil, coarse salt, and dry dill seasoning Bake in 450 degree oven for 20 min, stirring after 10 minutes Peel potato(es) and cut into 1/2 " cubes Toss with olive oil and coarse salt After the beets have baked for 20 minutes, scoot them to the side of the dish and add potatoes Bake at 450 for another 20 minutes, stirring after 10 minutes The veggies are good like this, but for those who use dairy...... heat 1 cup of heavy cream and add 1T of horseradish, salt and pepper.
