I've just started eating beets and I LOVE this recipe.

Peel beet(s) and cut in 1/2 " cubes

Toss with olive oil, coarse salt, and dry dill seasoning

Bake in 450 degree oven for 20 min, stirring after 10 minutes

Peel potato(es) and cut into 1/2 " cubes

Toss with olive oil and coarse salt

After the beets have baked for 20 minutes, scoot them to the side of the

dish and add potatoes

Bake at 450 for another 20 minutes, stirring after 10 minutes

The veggies are good like this, but for those who use dairy...... heat 1

cup of heavy cream and add 1T of horseradish, salt and pepper. This can be

used over the veggies or over veggies and a 'meat' patty you've baked along

with the veggies.

I'd love to see the recipe for the beet patties.

I don't like beets, but I want to find a way to

eat them that I might enjoy since they are

so good for us.

Last night I made pasta with a four cheese sauce

and had roasted green beans, too.

Tonight I want to make the soyrizo chili since

it is rainy and going to be much cooler weather.
