Pecan Baked Zucchini

I'm really kind of ignorant about zucchini, and so had bought these but kept

hesitating on actually doing something with them. Last night was garbage night

and I decided it was do or die night for my zucchini. I spent a lot of time

looking for recipes and most wanted me to shred a mountain of the stuff, which

is very painful to my lazy bone. So, I found this one that was so simple, and

naturally dumbed it down even more. I used 2 because I had 2 that were in

jeopardy, but one could just make the 1 and even use a toaster oven... I wonder

about microwaves, it would cook for sure, but a little different on top - just a

little, not much.

Preheat oven to 350. Sautee mild onions in olive oil with a pinch of

garlic powder. Scrub the zuchini and slice it open lenthwise. Make lots of

little slices in the inside, both lenthwise and crosswise. If you can get them

to open up any, it will help to hold the stuff on top, so it doesn't just roll

off.

Drizzle the sauteed onions and oil over the tops.

Sprinkle the top with salt, pepper, nutmeg, minced pecans and parmesan cheese

(reg or vegan).

Bake 15 minutes, then turn dial to broil for a few minutes and watch to not

burn.

I thought it was an odd combination of taste, but was very pleasantly

surprised. The regular recipe used shallots, which I also know nothing about,

but read on the internet they were like mild onions with a garlic flavor to

them, so I just used onions with a pinch of garlic. They also added dried

bread crumbs or saltine cracker to the pecans, but seemed like too much work to

me. :)

i love zucchini.  one of my favorite super-fast, super-simple recipes features

zucchini.  i cook up a pot of pasta (farfalle is my fave with this).  Meanwhile,

I saute some minced garlic in a little olive oil over medium-high heat for a

minute, and then add 2 quartered and sliced zucchini.  Season with salt and

pepper, and dried basil and saute a few minutes.  I add one can of petite diced

tomatoes and heat through.  I toss in the cooked pasta and saute a minute more. 

I serve with parmesan cheese.  Donna has also posted a excellent zucchini

pie...the recipe is in the files.
