Guest guest
Sorry you are not feeling well, Reni. I happen to have caught a bit of a Springtime cold myself; I thought it was just allergies. Anyway, a soup we like to have when we are feeling yuckie and have stuffy noses is a spicy but flavorful soup called All The Reds. Take good care of yourself and get well soon. All The Reds Soup (vegan) 1 red bell pepper, seeded and chopped 1/2 small habanero chili, seeded and finely minced 1 large red onion, chopped 3 garlic cloves, minced 2 Tbs olive oil 1 can (14 oz)can diced tomatoes w/ jalapeno peppers 4 cups stock (used Imagine brand no-chicken broth) 2 Tbs rice (your choice as any type works well in this; used basmati) 2 Tbs veg Worcestershire sauce 1 cups prepared red kidney beans 1 tsp dried oregano 1 tsp sugar (used sucinot) Salt and freshly ground pepper; fresh parsley, chopped for garnish. 1. Put the red pepper, onion, garlic and oil into a large saucepan. Heat until sizzling, then turn down heat to low. Cover and cook gently for 5 minutes. 2. Add the rest of the ingredients, except the garnishes, and bring to a boil. Stir well, then simmer, covered, for 15 minutes. Check the seasonings, garnish and serve hot. serves 4 to 6 ~ PT ~ It is magnificent to grow old, if one keeps young. ~ Harry Emerson Fosdick , Reni <renireligion wrote: > > sorry for the cross-post. but i seem to have caught a nasty case of the > bubonic plague (or quite possibly the flu) and am looking for a good > " chicken " noodle soup recipe to help speed it out of my system. > > thanks all! > > ^8^ Reni ^8^
