I like to make this when we are having tacos and everyone can put some on their plates or add it to the taco they are creating. It is very easy to make and you can play around with the recipe to make it more spicy to suite your taste. Tex-Mex Rice 1 cup uncooked long grain rice (or rice of your choice) 1 medium onion, chopped 2 Tbs vegetable oil 2 cups boiling water 1 medium green bell pepper, chopped 1 1/2 tsp chili powder 1 tsp salt 1 can (14.5oz) diced tomaoes, drained In a skillet saute rice and onion in oil until rice is browned and onion is tender. Stir in the water, green pepper, chili powder and salt. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Stir in tomatoes; heat through.
