Guest guest Posted April 11, 2008 Report Share Posted April 11, 2008 This came about as a " failure " of a an attempt to copy a dish that my Grans had made. It turned out wonderfully though! Hers had breaded okra and also potatoes in it...mine is a bit different... still yummy!!! Okra Hash 1 lb fresh okra 1 large onion 1 (15oz) can diced tomatoes (drained) Directions: *Heat just a bit (enough to coat the pan)of olive oil or water in a large cast iron skillet over med.heat *Dice the onion, add to pan, stir occasionally *Cut the ends off the okra and cut into slices *Add okra to pan *Turn heat up to med-high *Add a bit of salt and pepper, to taste *Cook, stirring regularly until okra and onion are nicely browned *Add tomatoes and cook about a minute more, stirring constantly, just til tomaotes are heated through ***Thats it!
