It was very, quick, yummy and satisfying Mixed Beans 1- 16 oz. can Black Bean 1 - 16 oz. can of Great Northern Beans 1 - 16 oz can of Pinto Beans Drain and rinse the beans 1 16 oz. can of stewed tomatoes 1/4 t. ground cumin 1/4 t. ground coriander Blend together the tomatoes, cumin and coriander in a blender. I/3 c. onions, diced 1 T oil 1 t. mustard seeds 1 t. cumin seeds Heat oil in a med. size pot and add mustard and cumin seeds. When they start to pop, add onions and stir often. When onions are tender crisp, about 2 minutes, add the tomato mixture and beans. Cover and simmer for about 10 minutes. Remove from heat and stir in 1-2 T. of Cilantro(chopped) Rice 2 c. water 1/2 c. " chicken " broth, made with 1/2 c. water and 1 t. of McKay's " Chicken " style seasoning or Bills Best Chick'nish seasoning(these are all vegetarian and easy to find at health food stores and on-line) 2 c. Basmati rice - rinsed Heat water and broth and add rice. Cook uncovered for 10 minutes or until tender. Diced onions, tomatoes, green peppers, cilantro and cheese(veggie cheese if desired). Have each person put a bed of rice on their plate or in a bowl. Layer the beans, cheese, tomatoes, onions, green peppers, cilantro and cheese(veggie cheese if desired) over it.
