I threw in a handful of shredded red cabbage to give this salad more color. Feel free to experiment with different types of vinegar (I think I'll make it with rice wine vinegar next time) and veggies (cabbage is a good or red bell pepper). Cauliflower Salad 1 head cauliflower, washed and cut into bite-size pieces 1 carrot, peeled and shredded 1/4 purple onion, thinly sliced 1/4 cup red wine vinegar 2 T. extra virgin olive oil 1/2 tsp. prepared brown mustard 1 clove garlic, minced salt and pepper, to taste Steam cauliflower briefly (about 3 minutes) until slightly softened. Do not overcook. Rinse in cold water and drain well. Place cauliflower in a bowl and add carrots and onion. Mix vinegar, olive oil, mustard, garlic, salt and pepper together and pour over cauliflower mixture.
