I end up adapting non-veggie recipes from non-veggie cookbooks. There are some great and easy (as well as tried and true) recipes in our group's file section. It's a wonderful resource, although there are so many recipes in there it's hard to choose just one to try. PT and I have worked hard at setting the files up so they are well organized and hopefully easier for everyone to use. I believe there is even a section for smaller portion recipes for singles. Here's a link: /files What kind of recipes are you interested in? I find that often if I post a recipe request on this list, a wonderful recipe will show up in my inbox.
