There are loads of great recipes in this. Honey-Baked Carrots and Apples Simple to make, this sweet blend of carrots and apples makes any meal a special event. 3 c. coarsely shredded carrots ( I used my mandolin with the large teeth blade for this and the apples) 2 small sweet apples, coarsely shredded ( I used Fuji) 1/2 t. ground cinnamon 1 T. honey 1/4 c. orange juice Topping 1 T. wheat germ 1/4 t. ground cinnamon 2 t. Smart Balance( I used Smart balance spray, found near Smart balance spread) Preheat oven to 350 F. Lightly oil a 1 qt. dish or spray with a nonstick cooking spray. In a large bowl, combine carrts, apples, cinnamon, honey and orange juice. Mix well. Put mixture into prepared baking dish. Press mixture down gently with the back of a spoon. For topping: In a small bowl combine wheat germ and cinnamon. Sprinkle evenly over carrots. Dot with Smart Balance Spread. ( I sprayed Smart Balance Spray instead). Bake uncovered, 40 minutes.
