Curry-Spiced Lentils & Spinach

I made this for dinner tonight. I don't plan ahead

much, so I made this on the stovetop. I sauted the

onions and garlic in a little bit of olive oil and

then added the spices, stirring until fragrant. I

added the lentils and broth and brought to a boil. I

reduced the heat and cooked for about 30 minutes,

until the lentils were tender. I had to add about 2

more cups of broth. I added salt and pepper to tate.

I left out the rice in the recipe and just made

Basmati rice on the side. I mixed a little Harissa

(I'll post the recipe seperate) into my lentils and

rice.....yum!

 

Curry-Spiced Lentils & Spinach

 

1-1/2 teaspoon curry powder

1/2 teaspoon ground cumin

1 teaspoon ginger

1/4 teaspoon turmeric

1/4 teaspoon cayenne

1 medium onion, chopped

2 cloves garlic, crushed and minced

1 cup lentils, rinsed

1/4 cup converted rice

1 10-oz pkg chopped spinach, partially thawed and

broken up

2 cup vegetable broth

salt to taste

Chopped tomato & cilantro for garnish, if desired.

 

Combine first 11 ingredients in the crockpot. Cover

and cook on low for about 6 hours, or until rice and

lentils are tender but not mushy. Add salt to taste;

serve garnished with chopped tomato and cilantro if

desired. May be doubled. Makes 2 to 3 main dish

servings.
