Tomato soup

I just made a big pot of tomato soup to have for dinner tonight. We are

having it with grilled soy cheese on rosemary bread.

 

Olive oil

1/2 large onion chopped

5 cloves garlic chopped

1 - 28 ounce can Diced tomatoes with basil, garlic and oregano

1 - 28 ounce can crushed tomatoes

1 - 14.5 ounce can fire roasted tomatoes

1 - 6 ounce can tomato paste

Fresh basil

Fresh parsley

Some veg broth

Mrs Dash seasoning

salt and pepper to taste

paprika

 

sweat the onions and garlic in the olive oil, season with Mrs Dash when

onions are clear add the tomatoes with the liquid, the tomato paste and the

vegetable broth add paprika salt and pepper, basil and parsley cover and

bring

to boil, turn heat down to simmer, simmer for about 45 min. stirring

occasionally. When heated through put the blender or blend with immersion

blender.

 

Eat and enjoy
