Guest guest Posted January 30, 2008 Report Share Posted January 30, 2008 Here's a great / simple recipe I got from my mom: Ingredients: 1 cup quinoa (rinsed and drained) Salt Extra virgin olive oil 1 red bell pepper, diced 2-3 minced garlic cloves (I just used powder 1 tsp. dried basil 2 cups sliced shittake mushrooms, sliced* 1 small onion, diced 2 -3 fresh scallions (optional) Place quinoa in a saucepan with 2 cups water and bring to a boil. Add a pinch of salt, cover, and reduce heat. Cook about 25 minutes or until all liquid is absorbed and quinoa " opens up " . While quinoa cooks, place small amount of oil, garlic, onion, and red pepper in a skillet and turn heat to medium. When peppers begin to sizzle, add a pinch of salt and basil, and saute for 1 or 2 minutes. Stir in mushrooms and saute another 2 minutes. Reduce heat to low. When quinoa is cooked, stir in the mushroom mixture. Garnish with scallions if desired. *The recipe called for 1 cup Shittake and 1 cup white button mushrooms. I really liked it with all shittake.
