Recipe: Crispy Tofu with Veggies (vegan)

spy Tofu with Veggies (vegan)

Makes 4 servings.

 

 

· 1 16-ounce package extra-firm tofu, drained

· 3T reduced-sodium teriyaki sauce or soy sauce (enough to cover tofu)

· 2c fresh snow pea pods (8 ounces)

· 1/4c yellow cornmeal

· 1/2t ground red pepper

 

· 1/2t ginger

· 2t toasted sesame oil

· 2 medium sweet red/yellow peppers, sliced lengthwise

· 8 green onions, sliced lengthwise

· 2t olive oil

 

· sesame ginger dressing (newman's own is pretty good)

 

· ½ - 1 bag of baby spinach

· 1T white or black sesame seed, toasted (optional)

 

 

 

1. Cut tofu crosswise into eight 1/2-inch-thick slices. Arrange

slices in a single layer in a 2-quart rectangular baking dish. Pour

enough of the teriyaki sauce over tofu to cover it, let stand at room

temperature for 15 minutes then flip. marinate for longer if you can.

2. Remove strings and tips from pea pods; slice lengthwise. Set pea

pods aside.

3. Pour 1 teaspoon of the sesame oil (i use a bit more) into a large

nonstick skillet. Preheat over medium-high heat. Stir-fry sweet

pepper strips for 2 minutes. Add pea pods and green onions; stir-fry

for 2 to 3 minutes more or until crisp-tender.

4. Remove skillet from heat. Transfer vegetable mixture to a serving

platter; cover and keep warm. Wipe skillet clean.

5. In a shallow dish combine cornmeal and ground red pepper.

Carefully dip tofu slices in cornmeal mixture; press gently to coat

both sides. In the same skillet heat the remaining 1 teaspoon sesame

oil and the olive oil over medium heat. Cook the coated tofu slices

for 2-1/2 to 3 minutes on each side or until crisp and golden brown,

using a spatula to turn carefully.

 

 

 

Put some spinach on plate, fancy drizzle some dressing on spinach,

then put veggies topped with two slices of tofu, sprinkle sesame

seeds and serve.

this sounds good. i've tried to fry tofu and achieve

the same crispy texture of some tofu i have had at

chinese and thai restaurants. i'll have to try the

cornmeal. i actually saw a lady preparing fried tofu

on tv the other night and she rolled the tofu in flour

before frying. i'm going to have to try this recipe.
