Snowed In Spaghetti (recipe)

We live on a mountain and was quite surprised by a snow storm the

other day. (Of course the snow storm came the day I was to go to the

market for next weeks food and I decided to sleep in.)

 

I had to dip into my emergency stash and ended up throwing a little

this and that into the pot, and what came out was surprisingly tasty

and is officially known in our home as " Snowed In Spaghetti " .

 

Ingredients:

1 can of black beans (drained)

1 box of whole wheat spaghetti (cooked and drained)

1 can of french cut string beans (drained)

1 cup of zesty house itallian dressing

1 TBS coconut oil (any oil will work)

1/4 cup grated asiago cheese

 

In a large pan heat the oil, then add the black beans and stir until

heated.

 

Next add the string beans and the pasta. Mix them together in the

pan stir until heated through.

 

Add the dressing to the pot and continue to mix well, coating the

noodle mixture. Finally add the grated asiago cheese mix thoroughly

and serve immediately.

 

I added a little bit of freshly ground pepper to mine, but the kids

liked it just as it was. They really enjoyed the recipe and they

told me that they want to have it when the next snow comes. I hope

you enjoy it too.

 

I would love to hear of variations that you try with this. I plan to

make it using mushrooms and tomatoes.

 

BTW, my oldest daughter said that it was really good cold the next

day. She ate it all before I could try any- so I will have to take

her word for it.
