Enjoy, Judy Red Lentil Dal This is delicious and can be served as a soup or over basamti or brown rice 2 c. Red lentils 3 c. Hot water 1 t. Cumin Seeds 1/4 c. onions, diced fine 2 garlic cloves, minced 1/2 t. Tumeric 1 T. McKays " Chicken " Style Seasoning or Bill's Best Chic'nish Seasoning ( these are both all vegetarian and can be purchased many places on the internet & health food stores) 2 Bay Leaves 1 qt. Hot water Salt to taste Rinse the lentils well and soak in 3 cups of hot water for 5 minutes. Drain. Lightly spray a soup pot with pan spray. Heat the pot and add the Cumin Seeds. Stir briefly and add onion and garlic. heat for a few minutes, stirring occasionally. Add the lentils, tumeric and " Chicken " seasoning. Stir frequently and continue heating for a couple of minutes. Add the hot water and Bay leaves. Cover and cook until the lentil are tender, about 25 minutes. Serve over basmati or brown rice if desired. We ate it as a soup. Per 1/2 c. serving: 119 calories; 9.1 g. protein(30%); 20.7 g. carbohydrate(67%); 0.4 g. fat; 327 mg sodium; 28 mg. calcium; 0 mg cholesterol Quote Link to comment Share on other sites More sharing options...
