Guest guest
Here is one of my favorites. I haven't made it in a long time. I better get my crock pot going again! Wild West Veggie Casserole 1 medium onion, chopped 1 Tbs. olive oil 1 (12 oz.) package veggie ground 5 to 6 potatoes, sliced thin 1 (15 oz.) can red beans, rinsed and drained 1 (14.5 oz. ) can diced tomatoes 1 Tbs. flour 1 tsp. chili powder 1 tsp. smokey paprika 1/2 tsp. cumin powder Salt and pepper Saute the chopped onion in the vegetable oil until softened. Mix with the veggie ground and pour mixture into a greased crock pot. Layer the sliced potatoes over top. Add the beans on top of the potatoes. Mix the can of diced tomatoes [juices and all] with the flour, chili powder, paprika, cumin, and salt & pepper to taste. Pour this over the bean layer, but do not stir. Cook on low for about 7 hours or until potatoes are tender. Yield: about 4 to 5 servings Served with extra hot sauce, sour cream, chopped black olives, lettuce, tortilla chips, etc. Whatever strikes your fancy. ~ PT ~ Most powerful is he who has himself in his own power. ~ Seneca (4 BC-65 AD) ~~~*~~~*~~~> , " snella1 " <snella1 wrote: > > Hello all! > > I received a slow cooker for Christmas and can't wait to put it to > work. It is vegan and very delicious. You could also use Morningstar Farms brand or any other you find. Textured Vegetable Protein is good to use too. ~ PT ~ The beauty of the world and the orderly arrangement of everything celestial makes us confess that there is an excellent and eternal nature, which ought to be worshiped and admired by all mankind. - Marcus Tullius Cicero (106-43 BC)
