Here is one of my favorites. I haven't made it in a long time.

I better get my crock pot going again! :)

 

Wild West Veggie Casserole

 

1 medium onion, chopped

1 Tbs. olive oil

1 (12 oz.) package veggie ground

5 to 6 potatoes, sliced thin

1 (15 oz.) can red beans, rinsed and drained

1 (14.5 oz. ) can diced tomatoes

1 Tbs. flour

1 tsp. chili powder

1 tsp. smokey paprika

1/2 tsp. cumin powder

Salt and pepper

 

Saute the chopped onion in the vegetable oil until softened.

Mix with the veggie ground and pour mixture into a greased

crock pot. Layer the sliced potatoes over top. Add the beans

on top of the potatoes. Mix the can of diced tomatoes

[juices and all] with the flour, chili powder, paprika, cumin,

and salt & pepper to taste. Pour this over the bean layer,

but do not stir. Cook on low for about 7 hours or until potatoes

are tender.

Yield: about 4 to 5 servings

Served with extra hot sauce, sour cream, chopped black olives,

lettuce, tortilla chips, etc. Whatever strikes your fancy.

Sounds yummy..is veggie round a replacement brand name?

Yes, " Veggie Ground " is like a hamburger substitute

made by a company called Yves. It is vegan and very

delicious. You could also use Morningstar Farms brand

or any other you find. Textured Vegetable Protein is

good to use too. :)
