Guest guest Posted December 24, 2007 Report Share Posted December 24, 2007 Here is a delicious family favorite. It makes a nice dinner to serve to guests that aren't vegetarian. They never even miss the meat. Black Bean-Tortilla Pie 1/2 cup chopped onion [about 1 medium] 1/2 cup chopped seeded tomato [1 small] 1 small jalapeño chile, seeded and finely chopped 1 can (11 oz.) tomatillos, drained 1 Tbs. olive oil 1 can (15 oz.) black beans, drained and 3 Tbs. reserved liquid 1/2 cup chopped red bell pepper [1 small] 1/4 cup chopped green onions [2 or 3 medium] 1 tsp. ground cumin 1 egg 1 egg white 1 can (15 oz.) black beans, rinsed and drained 8 corn tortillas (6-inch diameter) 1/2 cup shredded Monterey Jack cheese 1 1/2 cups salsa Plain yogurt or sour cream Heat oven to 375?. Grease a 3-quart casserole. Place onion, tomato. chile and tomatillos in a blender or food processor. Cover and blend until smooth. Cook tomatillo sauce and oil in a skillet over medium heat for 3 minutes, stirring constantly. Place 1 can black beans and 3 Tbs. bean liquid in blender or food processor. Cover and blend just until chunky. Mix together chunky beans, bell pepper, green onions and cumin in a large bowl. Stir in egg, egg white and remaining black beans. Place 2 tortillas in casserole. Layer with 1 cup bean mixture, two tortillas, 1/2 cup tomatillo sauce, 2 tortillas, remaining bean mixture, 2 tortillas, remaining tomatillo sauce and cheese. Bake uncovered about 35 minutes or until cheese is melted. Let stand 5 minutes before serving. Yield: 6 servings ~ PT ~ Live as if you were to die tomorrow.
