Guest guest Posted December 24, 2007 Report Share Posted December 24, 2007 This is a rich and large dish that is perfect for taking to a potluck. There is never any left in the pan when I do. Both kids and adults love it. Baked Macaroni 'n' Cheese 1 package elbow macaroni [16 oz.] 2 pounds process American cheese, cubed 8 ounces Swiss cheese, cubed 1 medium green pepper, chopped 1 medium onion, finely minced 1 can diced green chilies, drained [4 oz.] 1 jar diced pimientos, drained [2 oz.] 4 eggs 4 cups milk 1/2 tsp. pepper Salt, to taste 1/4 tsp. paprika Cook macaroni, drain and rinse. Add cheeses, green pepper, onion, chilies, and pimientos. Combine eggs, milk, and pepper; add salt if you want. Pour over macaroni mixture and mix well. Pour into two greased 13 x 9 x 2 inch baking pans. Sprinkle with paprika. Bake uncovered at 350? for 35 minutes or until bubbly and browned. Yield: 18 (3/4 cup) servings ~ but i have yet to find anyone who can stop at 3/4 cup! *lol* ~ PT ~ Christmas is not a time nor a season, but a state of mind.
