Rainbow Bell Pepper Pasta Toss 6 to 8 ounces uncooked linguine or spaghetti 1 1/4 cups diced tomatoes 3/4 cup finely chopped fresh parsley or cliantro or watercress 1 4 oz. package crumbled feta cheese with basil and sun-dried tomatoes or another flavor will work 1 cup (mixed colors) bell peppers, seeded, and cut into 1/8-inch strips 1/4 teaspoon salt 1/4 cup sliced ripe olives, drained Cook pasta according to package directions. Place bell peppers in a colander; drain pasta over bell peppers, this will soften them a little. Combine pasta, bell peppers, tomatoes, and remaining ingredients in a bowl, toss gently.
