Guest guest Posted December 2, 2007 Report Share Posted December 2, 2007 This vegan cookie recipe was shared by Jacquelyn. I found this at vegweb.com and it's absolutly delicious! Here's the recipe. I used my own egg replacer recipe instead of Ener-G though. Austrian Jam Cookies 1 cup Earth Balance non-hydrogenated vegan margarine 1 cup vegan sugar (I use Florida Crystals) 2 1/2 cups flour (I use organic unbleached white) 2 Ener-G Egg Replacers 2 teaspoons vanilla jam slivered almonds (optional) Beat margerine, vegan sugar, Ener-G Egg Replacer, and vanilla until smooth and creamy. Stir in flour a cup at a time. Roll dough into balls. Roll balls into slivered almonds if desired. Thumb-print each ball and scoop a blob of jam into each cookie.
