This recipe, which I originally made for the vegans, is now my very favorite cookie recipe. Karen -------- Chocolate Chip Orange Pecan Cookies 1 1/4 cups whole wheat pastry flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon vanilla extract 2 teaspoons orange extract 1/3 cup olive oil 1/2 cup brown rice syrup 2/3 cup soy milk 1 cup non-dairy chocolate chips 1 1/2 cup chopped pecans Preheat oven to 350 and spray cookie sheets with cooking spray. Mix flour, baking power and salt. Stir in oil, vanilla, and orange extract. Slowly stir in the soy milk. Fold in the chocolate chips and pecans. Drop dough onto cookie sheets. Bake for 13-15 minutes. Transfer to a cooling rack. Cookies will be slightly sticky and need to be stored with wax paper between layers to keep from sticking. Hi Everyone! I have been vegetarian for 4 years but vegan for only almost one now and this is my first " vegan " Christmas/ Holiday Season. I had no idea how many of my cookie recipes had eggs in them and I am finding it very difficult subbing them out. I can still make my gingerbread folks but that is a very standard recipe that everyone seems to already have. I am having a HOUSE FULL (did I say that loud enough?) of guests, staring the 23rd and lasting through the 2nd. When I say " house full " I am referring to, counting my husband and myself, 11 people! I could really use some favorite, tried and true VEGAN cookie recipes that I can make now and freeze for the hordes. Can anyone help me out?
