Guest guest Posted November 26, 2007 Report Share Posted November 26, 2007 Couscous with Peas 1-1/4 cups vegetable broth 1 TB olive oil 1 cup couscous 1-1/2 cups frozen peas 1/2 tsp. salt 1-1/2 tsp. dried parsley 1-1/2 tsp. dried basil 1 tsp. grated orange peel 1/8 tsp. ground black pepper Bring the broth and olive oil to a simmer in a medium sauce pan over medium high heat. Remove from the heat and stir in the couscous. Cover and let stand for 5 minutes. Combine the peas, salt and water to cover in a small sauce pan. Cook over medium heat until tender, about 2 minutes; drain. Add the peas, parsley, basil, orange peel and pepper to the couscous and toss with a fork. Serve immediately. Serves: 4.
