Cranberry Cheesecake Bars

These melt in your mouth. They are so delicious. We couldn't wait until

they were chilled, so ate some as soon as they cooled off. Yummmmmm.

Cranberry Cheesecake Bars

 

a.. 2 cups all-purpose unbleached flour

b.. 1 1/2 cups oats

c.. 3/4 cup firmly packed brown sugar

d.. 1 cup butter or margarine, softened

e.. 1 (8 ounce) package cream cheese, softened

f.. 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated

milk)

g.. 1/4 cup lemon juice from concentrate

h.. 1 tablespoon brown sugar

i.. 2 tablespoons cornstarch

j.. 1 (16 ounce) can whole berry or jellied cranberry sauce

1.. Preheat oven to 350 degrees F. In large mixing bowl, combine flour,

oats, 3/4 cup sugar and butter; mix until crumbly. Reserving 1 1/2 cups

crumb mixture, press remainder firmly on bottom of greased 13x9-inch baking

pan. Bake 15 minutes.

2.. Meanwhile, in small mixing bowl, beat cream cheese until fluffy.

Gradually beat in EAGLE BRAND® until smooth; stir in lemon juice from

concentrate. Spread evenly over prepared crust. In small bowl, combine

remaining 1 tablespoon sugar and cornstarch; stir in cranberry sauce. Spoon

evenly over cream cheese layer. Top with reserved crumb mixture.

3.. Bake 40 minutes or until golden. Cool. Chill. Store covered in

refrigerator.

These sound great. I have a jar of cranberry sauce

we didn't use on Thanksgiving so I will buy the rest

of the ingredients this weekend. Every cheesecake

recipe I have tried out of this little Eagle Brand cookbook

has turned out perfect so I am sure these will too.
