Potato Tacos with Cheese and Jalapenos 8 soft corn tortillas 1 to 1 1/3 cups mashed potatoes 1/4 lb. cheddar cheese or Jack cheese cut into 16 matchsticks 1/2 stick butter, room temp. 16 pickled jalapeno slices salsa of your choice (jar or homemade) Soften tortillas in microwave or on a low burner on the stove flipping them over a few times. Spoon 1 1/2 Tbls. mashed potatoes into center of each tortilla, flatten out the potato leaving 1-inch border. Lay 2 cheese matchsticks and 2 jalapeno slices on each tortilla and fold into half-moon shape. In a large skillet over med. heat melt 1/2 the butter. Set 4 of the tacos in the pan and cook until browned, about 3-4 minutes on each side. Drain on paper towels. Repeat with the remaining butter and tacos. Now do you need to pre-warm the cold mashed potatoes any, or do they manage to get warm enough to melt the cheese in the cooking process?
