Cream of Vegetable Soup 1 medium onion, chopped 1/4 cup butter or margarine 1/4 cup flour 2 cup vegetarian " chicken-flavor " broth 1 cup milk 1 cup half-and-half cream 1/2 tsp dried basil 1/4 tsp salt 1/4 tsp pepper 1/4 tsp garlic powder 3 cups chopped cooked mixed vegetables (such as broccoli, carrots and cauliflower) In a large skillet or Dutch oven, saute the onion in the butter until tender. Add flour; cook and stir until bubbly. Gradually add broth; cook and stir until thickened, about 5 minutes. Stir in milk and cream. Add the basil, salt, pepper and garlic powder. Add the vegetables; cook gently until warmed through. Yield: 4 to 5 servings ~ PT ~ Hospitality shares what it has. It does not attempt to give what it has not.
