Maple Pecan Sweet Potatoes I got it out of Merilu Henners Healthy Holidays... 8 med sweet potatos (3 lbs) 1/4 c. margarine (I use earth balance) 1/3 c. maple sugar 3/4 tsp. salt 1/3 c. chopped pecans HEat the oven to 350F. Scrub the sweet potatos thoroughly with a vegetable brush; do not peel. Pierce the potatoes with a fork to allow steam to escape while they bake. Place the potatoes directly on the oven rack (I find they " leak " so I foil wrap them) Bake for 1 hour, or until tender when pierced with a fork. When the potatoes are cool enough to handle gently peel off the skins usuing a paring knife. Cut the potatoes into 1/2 inch slices. In a large sauce pan over meduim heat, heat the margarine, maple sugar, 1/4 c. water (I use about 6 squirts of maple syrup in this too!) and salt about 2 minutes stiring constantly, until the mixture is smooth and bubbly. Add the potatos and pecans and stir gently until coated. Place in a serving dish and go! I have also just baked it all together instead of doing it separate and it works too.
