Hi there, I'm looking for inspiration - my colleague is hosting a huge Thanksgiving potluck this Saturday in a heated tent in her backyard. An unscientific sampling shows that most people are bringing traditional side dishes - heavy on the starch. Mashed potatoes, sweet potatoes, stuffing and the like. I'd like to bring something lighter and preferably filled with veggies as it looks like the only green thing there will be a greenbean casserole loaded up with butter! I thought about bringing a hot marinated veggie dish (made with blanched veggies, salad dressing and tom. sauce) but it feels decidedly untraditional.
