This is fast, low fat, colorful, tasty, healthy and

everyone asks for more. Did I brag? It's gotta be that

cute little acini pasta, even kids like this one.

Give it a go!

Acini di Pepe Salad with Herbs and Veggies

 

Dressing:

2 tbsps. fresh lemon juice

1 tbsp. olive oil

1 tbsp. red wine vinegar

1/2 tsp. salt

1/4 tsp. black pepper

3 cloves garlic, crushed

 

Salad:

1 cup uncooked acini di pepe or orzo *see note

2 cups fresh yellow corn kernels

2 cups chopped tomato

1/2 cup vertically sliced red onion

1/4 cup finely chopped fresh basil,watercress, Italian

parsley or cilantro (I use cilantro cuz I love it)

Garnish with some sliced olives

 

To prepare dressing, combine first 6 ingredients in a

jar; cover tightly, and shake vigorously. To prepare

salad, cook pasta according to package directions.

Drain, and place in a large bowl. Spoon half of

dressing over pasta; toss to coat. Cool to room

temperature. Add the remaining dressing, corn, tomato,

onion, and basil to pasta; toss to coat. Let stand 30

min. Garnish with colives is desired. 4 servings.

* Acini pasta is the teeny little round pasta balls

but orzo makes a good substitute.
