This is good put inside a toasted Whole Wheat Pita Pocket, with some sprouts

and Cucumber slices added. My favorite way to use it, is as a salad

dressing on a tossed Salad as a dressing. I add some Oyster Crackers to the

Salad too instead of Croutons. Sprinkle the salad with some Tony Chachere's

Creole Seasoning. Oh so good. Also it is good as a dip for pretzels,

chips, raw veggies, etc....

Enjoy,

Judy

Garbanzo Bean Spread or Salad Dressing

2 cans (about 4 c. total) of Garbanzo/Chick Peas

1/3 c. Veganaise or Mayonaise

1/3 c. jarred Roasted Red Pepper slices

1 t. Garlic Salt

1 t. Smoked Paprika

1 t. Cumin, ground

1/4 c. Tahini

1 T. Tony Chachere's Creole Seasoning

1/2 c. Red Onions, diced fine

1/4 - 1/2 c. Celery, diced fine

2 T. Lemon Juice

Combine first 8 ingredients in a food processor or Vita Mix and process

until smooth.

In a large bowl, mix together the Onions, Celery and Lemon Juice. Let set

for a minute or so and add the Garbanzo Mixture and still well.

I meant to say that I drain and rinse the Garbanzo beans before I use it in

this recipe. You can use Garlic powder or fresh minced garlic in this

recipe instead of Garlic Salt.
