Guest guest Posted November 4, 2007 Report Share Posted November 4, 2007 White Bean Salad Recipe from Michelle Beckles. ~~~Salad~~~ 1/2 lb. small white beans (dried) OR 3 cans (15 oz. ea.) canned beans, drained 1/2 cup celery, chopped 1/2 cup red onion, minced 1/2 cup red pepper, diced 1/2 cup fresh parsley, chopped 1 TB fresh tarragon, chopped 1/2 cup Nicoise olives ~~~Dressing~~~ 4 TB extra virgin olive oil 4 TB red wine vinegar 3 small garlic cloves, minced 2 anchovies, finely minced, optional 1/2 tsp. salt Ground pepper, to taste Cover beans with cold water and let stand overnight. Rinse and drain beans. Place in a sauce pan and cover with cold water, about 3 cups. Bring them to a boil, reduce heat, simmer 5 minutes. Remove from heat, cover and let sit 1 hour. At the end of one hour, drain and rinse beans and return to pan with 8 cups of fresh water. Simmer 20 minutes untill beans are tender, but not mushy. Drain and rinse in cold water. Whisk together all dressing ingredients. Combine beans and all other salad ingredients. Add dressing, toss and chill. Scatter olives over to top. Yield: 6 servings.
