I'm not sure how I'm going to manage certain situations yet, but one step at a time, I guess. I am not a bad cook, just don't have much time for it and it's not my favorite thing, so part of the process of learning to be vegetarian for me is making the process of cooking enjoyable. (I think that's going to require a housekeeper to clean the kitchen afterwards, but I'm trying!) I made a great lentil veggie stew the other night and thought I'd share it with my intro. Lentil Stew 1 cup lentils 1 16 oz. can vegetarian vegetable stock 1 8oz can tomato paste 1 cup water Approx. 1/4 cup potato flakes 1/2 cup frozen corn 1 tablespoon olive oil 1 package sliced raw mushrooms 1/2 cup diced onion 1 tsp to 1 tbsp minced garlic to taste (I use the kind in the jar.) (I use a lot- love garlic!) 2 stalks celery, diced Salt and black pepper to taste Combine lentils, stock, paste, and water and bring to a boil while stirring occassionally. When it boils, thicken with potato flakes and reduce heat. Add corn and let simmer. While the lentils are coming to a boil, lightly sautee the mushrooms, garlic, onions and celery in the olive oil, adding pepper and salt. When sauteed, add to the pot of lentils. Cover and let cook at low heat for 1 hr, stirring occassionally. Serves about 4 depending on your family's appetites. We ate it as-is, but it would have been great over brown rice.
