Guest guest Posted October 17, 2007 Report Share Posted October 17, 2007 Crock Pot Old Fashioned Vegetable Soup 1 TB extra virgin olive oil 2 medium sized carrots, peeled and finely diced 1 medium sized yellow onion, finely diced 1 celery rib, finely diced 2 small red potatoes, diced 1/2 small red bell pepper, seeded and finely diced 4 oz. green beans, ends trimmed and cut into 1 " pieces 1 large garlic clove, minced 6 cups vegetable stock 1 can (15.5 oz.) navy beans, or other white beans, rinsed and drained 1/2 cup green peas* Salt and ground black pepper, to taste 2 TB fresh parsley, chopped Place the oil, carrots, onion, and celery in a 6 quart crock pot/slow cooker. Cover and cook on HIGH heat setting to soften slightly while you assemble the remaining ingredients. Add the potatoes, bell pepper, green beans, garlic, and stock to the cooker. Cover and cook on LOW heat setting for 8 hours. About 30 minutes before serving, add the beans and peas and season with the salt and pepper. Just before serving, stir in the parsley.
