Sweet Potato - Butternut Squash Soup

This soup tastes divine. The difficult part was peeling the butternut

squash. I saw one day at Costco that they have bags of peeled and

squared butternut squash. The squares are larger in this bag, so you

may have to cut them down. Still it would make this recipe alot

easier. Those things are hard to peel. The Vegetable Bisque can be

purchased from Trader Joes, it makes this soup full bodied and really

yummy. No extra salt is needed because the Bisque is pre-salted.

 

Serves alot!!

 

Here it is:

 

1-2 T Olive Oil

2 Stalks of Celery chopped

1 Onion chopped

1 t of each Rosemary, Thyme and Sage

1/2 t salt

3 bay leaves

2 Large Sweet Potatoes peeled and diced in to small squares

3 cups Butternut squash peeled and diced into small squares

1 32oz aseptic soup pack from Trader Joes called Vegetable Bisque

 

In large pot, saute celery, onion, herbs in EVOO with salt sprinkled

on top to bring out the flavors of the onion & celery. Put potatoes

and squash in with sauted onion mix, fill with water until just

covering to top of the potatoes/squash in the pot. Bring to boil,

cover and turn down to low for 20 minutes until tender. Add vegetable

Bisque and mash the to potatoes with a masher depending on how you

like the consistency. It's nice to have a few chunks in there. Bring

it back to a boil, turn off and serve. It tastes even better the next

day!!!
