Guest guest
This is a re-post of one of my most requested quick bread recipes. It is so moist and delicious that everybody loves it. The pumpkin makes it a wonderful seasonal favorite. Chocolate Chip Pumpkin Bread 1/2 cup butter or margarine, softened 1 cup + 2 Tbs. sugar 2 eggs 1 cup prepared mashed pumpkin 1/4 cup soy milk [or whatever milk] 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1/4 cup baking cocoa 1 tsp. ground cinnamon 1 tsp baking soda 1 tsp salt 1 cup chocolate chips In a mixing bowl cream the butter with the sugar. Add the pumpkin, eggs, soy milk, and vanilla; blend well. In another bowl, sift together the flours with the cocoa, baking soda and salt. Combine with the pumpkin mixture until well blended and smooth, then fold in the chocolate chips. Transfer to a greased 9x5x3 inch loaf pan and bake at 350 degrees for 60 to 65 minutes, or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from the pan to cool on a wire rack. Yield: 1 loaf *easily doubles or triples ~ PT ~ Far away in the sunshine are my highest inspirations. I may not reach them, but I can look up and see the beauty, believe in them and try to follow where they lead. ~ Louisa May Alcott
