Guest guest Posted October 12, 2007 Report Share Posted October 12, 2007 Black Bean Salad 1 red bell pepper, finely diced 1 green bell pepper, finely diced 1 yellow bell pepper, finely diced 1/2 cup red onion, diced 1 can (15 oz.) corn, drained 1 clove garlic, minced 1 tsp. fresh cilantro, chopped 1/4 cup extra virgin olive oil 1/4 cup red wine vinegar 1 TB lime juice Salt and ground black pepper, to taste 1 can (15 oz.) black beans, rinsed and drained Tortilla chips, for garnish In a small bowl, combine peppers, onion, corn, garlic and cilantro. Add olive oil, vinegar, lime juice, salt and pepper to taste and black beans. Toss well and serve with tortilla chips. Serves 4 to 6.
