Guest guest Posted October 8, 2007 Report Share Posted October 8, 2007 Tofu Salad Dressing 1/4 lb. firm tofu 1/4 cup water or vegetable broth 1-1/2 TB balsamic vinegar 1-1/2 TB dill weed 2 medium cloves garlic 1/2 tsp. Dijon mustard 2 TB extra virgin olive oil Salt and freshly ground pepper to taste Place the tofu, water or broth, vinegar, dill weed, garlic, mustard in a blender. Blend until pureed. While the motor is running, slowly add the oil in a small stream until mixture is emulsified. Season to taste with the salt and pepper. Makes about 1 cup dressing. Tofu Tahini Dressing 1/4 cup Tahini (sesame seed paste) 4 oz. tofu (about 1/2 cup) 1/3 cup water 1/4 cup vegetable oil 2 TB lemon juice 1/2 tsp. salt 1 TB chopped green onion 2 cloves garlic, crushed 4 dashes Tabasco or other hot pepper sauce Tahini is a popular food from the Middle East made from sesame seeds. Place all ingredients in blender or food processor. Cover and blend on high speed, or process, until mixture is smooth. ABOUT 1-1/3 CUPS DRESSING 60 CALORIES PER TABLESPOON Tofu Mayonnaise 1 You can also add finely chopped white onion or scallion to zip it up. Serving Size: 1 4 ounces tofu 1/3 cup olive oil 2 tablespoons lemon juice 2 teaspoons Dijon mustard 1 teaspoon grated lemon rind Salt and pepper -- to taste Puree the tofu with 1/4 cup of water, oil, lemon juice and mustard until smooth. Add grated lemon rind and season with salt and pepper. You can add 4-6 garlic cloves, mashed with 1/2 teaspoon salt, to the mixture to make garlic mayonnaise.
