Guest guest Posted September 30, 2007 Report Share Posted September 30, 2007 PUMPKIN PIE SQUARES 1 cup sifted flour 1/2 cup quick cooking rolled oats 1/2 cup brown sugar 1/2 cup butter (1 stick) 2 cups of pumpkin (1 can) One 13 1/2 ounce can of evaporated milk 2 eggs 3/4 cup sugar 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves 1/2 cup chopped nuts 1/2 cup brown sugar (additional) 2 tablespoons butter (additional) Combine the flour, oats, brown sugar and butter in a mixing bowl. Mix until crumbly. Press into an ungreased 9 x 13 inch pan. Bake at 350° for 15 minutes. Then, combine pumpkin, evaporated milk, eggs, sugar, salt and spices. Beat well. Pour this into the baked crust. Bake at 350° for 20 minutes. Finally, combine the nuts, brown sugar and the 2 tablespoons of butter and sprinkle over the top. My family loves pumpkin pie and this makes a lot, and a pie was never enough for us. *lol* This recipe solved that problem. Fresh whipped cream on top, too.
