EGGS & HASH BROWNS BREAKFAST BURRITOS

 

1 cup shredded, peeled potatoes

1/2  tsp. garlic powder

1 Tbsp. margarine

1/2 cup red or green pepper, chopped fine

5 eggs

3/4 cup sliced green onions, with tops

1/2 tsp. salt

1 1/4 cups picante sauce

8 flour tortillas, heated

3/4 cup shredded cheddar

 

Heat margarine in non stick skillet. Mix potatoes and garlic; spread

into pan in thin layer. Cook without stirring until brown on bottom. Add

peppers; cook until heated through. Stir whole mixture until broken into

small pieces. Add eggs, onion and salt; cook until scrambled. Stir in

picante.

 

Put half cup of mixture onto each tortilla. Roll up, tucking in ends.

Place, seam side down, on jellyroll pan. Top with some picante sauce and

cheese. Bake at 300°, until cheese is melted.
