Guest guest Posted September 29, 2007 Report Share Posted September 29, 2007 EGGS & HASH BROWNS BREAKFAST BURRITOS 1 cup shredded, peeled potatoes 1/2 tsp. garlic powder 1 Tbsp. margarine 1/2 cup red or green pepper, chopped fine 5 eggs 3/4 cup sliced green onions, with tops 1/2 tsp. salt 1 1/4 cups picante sauce 8 flour tortillas, heated 3/4 cup shredded cheddar Heat margarine in non stick skillet. Mix potatoes and garlic; spread into pan in thin layer. Cook without stirring until brown on bottom. Add peppers; cook until heated through. Stir whole mixture until broken into small pieces. Add eggs, onion and salt; cook until scrambled. Stir in picante. Put half cup of mixture onto each tortilla. Roll up, tucking in ends. Place, seam side down, on jellyroll pan.
