[recipe*] Spicy Bean and Soyrizo Pie

Here is a yummy main dish pie recipe that I was

able to make vegetarian by using soyrizo in

place of the chouriz sausage that the original

recipe called for. It is so good! :)

 

Spicy Bean and Soyrizo Pie

 

1 package Soyrizo

3 cloves garlic, minced

1 Tbs. olive oil

1 can (11.5 oz.) condensed cream of mushroom soup

1 jar (16 oz.) hot picante sauce, divided

1/4 cup cornstarch

1 Tbs. chopped fresh parsley

1 tsp. paprika

1 tsp. salt

1/4 tsp. pepper

1 can (16 oz.) kidney beans, rinsed and drained

1 can (15 oz.) black beans, rinsed and drained

2 cups shredded cheddar cheese, divided

3/4 cups sliced green onions, divided

Pastry for a double crust pie (10 inches)

1 cup sour cream

1 can (2 oz.) sliced ripe olives, drained

 

In a skillet, saute the soyrizo and garlic in the olive

oil until sizzling and warmed through. In a large bowl,

combine the soup, 1 cup of the picante sauce,

cornstarch, parsley, paprika, salt and pepper; mix well.

Fold in the beans, 1 1/4 cups of cheese, 1/2 cup of green

onions and the soyrizo mixture. Line a pie plate with

bottom pastry; fill with bean mixture. Top with remaining

pastry; seal and flute edges. Cut slits in the top crust.

Bake at 425? for 30 to 35 minutes or until lightly browned.

Let stand for 5 minutes before cutting. Garnish each slice

with sour cream, olives and remaining picante sauce,

cheese and onions if desired.

Yield: 8 servings
