Guest guest Posted September 18, 2007 Report Share Posted September 18, 2007 Here is another wonderful way to serve corn. This is so good if you can use fresh or frozen sweet corn off the cob. Corn Casserole 1 large onion, chopped 2 medium green peppers, chopped 3 cloves garlic, minced 1/2 cup butter or margarine 1/4 cup all-purpose flour 2 cups canned or frozen corn 2 cups cooked rice 1 can (14.5 oz. ) diced tomatoes, undrained 4 hard-cooked eggs, copped 2 1/2 cups shredded cheddar cheese, divided 2 Tbs. Worcestershire sauce* 1 Tbs. [or to taste] hot pepper sauce 2 tsp. salt 1 tsp. pepper In a large skillet, saute onion, peppers and garlic in butter until tender. Stir in flour. Remove from heat; add remaining ingredients except for 1/2 cup cheese. Pour into a greased 2 1/2 quart baking dish. Bake, uncovered, at 350? for 45 minutes. Top with remaining cheese; let stand 5 minutes. Yield: 10 to 12 servings [as a side dish] * Yes, you can find vegetarian versions of Worcestershire sauce. You have to carefully read the labels to make sure that anchovies are not in the ingredient list.
