As written, this recipe doesn't make very much (I could have eaten the whole batch, but saved enough for a small thermos-ful to go in my lunch tomorrow). Next time I make it, I'll double the recipe. I bet it freezes very well. 1 teaspoon olive oil 1 rib celery, chopped 1/2 medium yellow onion, chopped 1 clove garlic, minced 4 ripe Roma tomatoes, peeled, seeded and chopped 3 cups vegetable broth 2 teaspoons dried basil 1/2 of a 6-ounce can of tomato paste 1 teaspoon sugar 3 dashes Tabasco salt, to taste In a large sauce pan over medium heat, saute onions, celery, and garlic in olive oil until vegetables are tender. Add the remaining ingredients and bring to boiling, then reduce heat to a simmer. Simmer about 5 minutes and remove from heat. Blend soup with immersion blender until smooth (or blend in batches in a blender). Season with salt and serve ______________________________\ ____ Looking for a deal?
