Guest guest Posted September 14, 2007 Report Share Posted September 14, 2007 I am always looking for different ways to cook up those " basic " veggies, like carrots, which could tend to be otherwise dull or boring veggies. When they are on sale and we buy a bunch, this is one way we use them up that tastes delicous. The trick is not to over-cook them. Chive Carrots 1 pound carrots, cut into 2-inch julienne strips 2 garlic cloves, minced 1 Tbs. olive oil 1 Tbs. margarine [vegan~ or butter if vegetarian] 2 Tbs. minced fresh chives In a large skillet, saute the carrots and garlic in the oil and margarine for 3 minutes. Reduce heat; cover and cook for 5 minutes or until carrots are crisp-tender. Sprinkle with chives. Serve immediately.
