QOTW: Breakfast ~ quick brain food for back-to-school?

Time for a new question of the week. :)

 

What is your favorite, quick breakfast idea that

helps to keep you going all morning?

 

 

*Sorry the summer season had me so busy that

I was not as faithful in posting these. Hopefully now

that the school season is back and schedules are

becoming more " regulated " I will be better at

remembering to do this fun group feature.

I like a bagel with cream cheese and a light smear

of sun-dried tomato pesto on top.

I also enjoy making a quick breakfast burrito with

egg, salsa and cheese... sometimes adding a chopped

up veggie sausage patty to the mix.

 

My son [age 14] is partial to hashbrown potatoes.

He pretty much can eat those every day.

I wish he was a bit more adventurous with his food,

and a lot less adventurous on his skateboard. ;)

For a quick breakfast pick-me-up I LOVE this granola cereal that I get from

Whole Foods market that has real fruit in it, which I eat with vanilla soymilk.

The I take 6 carrots, 1 or 2 grannysmith apples and some blueberries and run

them through my juicer--VERY good and energy-generating!!

My favourite breakfast is a large bowl of muesli with additional

wheatgerm, flaked almonds, sunflower, pumpkin and hemp seeds, topped by

fresh fruit (currently banana, raspberries, blueberries and

redcurrants) served with ice cold home-made almond milk. Keeps me going

until tea-time :-)

I love hot cereals, especially steel cut oatmeal.

Steel cut oatmeal (aka Irish oatmeal) is not quick,

but you can cook it the night before and it keeps in

the fridge for a good long time. You just reheat a

serving each morning.

 

But for a faster breakfast I love Wheatena. I cook

one serving of Wheatena with 1/4 to 1/3 cup of extra

wheat bran with water. It makes a huge bowl of

cereal. I add whatever fresh or dried fruit I have on

hand, cinnamon, sweetener (I use Equal, but you can

use whatever natural or artificial sweetener you like)

and some vanilla soy milk to thin it out. It's a

fiber-fest in a bowl, and tastes great!

I'm bad....I don't make myself breakfast (I usually

just make coffee for myself) most mornings. I make my

son a protein shake each morning using Spiru-tein.

Sometimes I grab a banana (if I have them around) and

eat it on my commute.

 

On the weekends I like to make breakfast burritos,

migas, huevos rancheros, or pancakes.

 

I start back to work/school on Wednesday and really

need to make myself eat breakfast so I'll have the

energy to keep up with my students. I like the idea

of cooking up some steel cut oats and just reheating

them in the morning. I think I'll also bake up some

quick breads and freeze in individual servings to grab

in the morning.

 

Now, what I really need are some great lunch ideas!
