Guest guest Posted September 2, 2007 Report Share Posted September 2, 2007 This is a simple method, and it always comes out fabulous. Heat a few tablespoons of good olive oil in a large pot. Have your vegetables assembled on the counter and as each one is chopped or sliced, add to the pot to cook. Add vegetables in this order: onions, garlic, green bell pepper, tomatoes, eggplant and zucchini. Add some italian seasoning, salt and pepper to taste. Cook 1 to 2 hours or until desired consistency. Serve with plenty of crusty french bread. Now is the time to make this as we seem to have an overabundance of these ingredients in the garden!
