Guest guest Posted August 29, 2007 Report Share Posted August 29, 2007 We had this for dinner tonight. It was delicious. Enjoy, Judy Creamy Asparagus Soup 1/2 Onion, chopped 2 T. Butter or Smart Balance Light(I used this one) 1 lb. fresh Asparagus, trimmed and coarsely chopped 1 c. Vegetable broth ( I used 2 Maggi Vegetarian Vegetable Bouillon Cubes with 1 c. hot water) 1 garlic clove, minced 1 dash black pepper 1 c. 1% milk Microwave the onion and butter covered in a large bowl, on HIGH for 2 minutes. Add Asparagus, vegetable broth, garlic and black pepper. Microwave, covered, on HIGH for 10-12 minutes. Puree in blender.
