Creamy Asparagus Soup

We had this for dinner tonight. It was delicious.

Creamy Asparagus Soup

 

1/2 Onion, chopped

2 T. Butter or Smart Balance Light(I used this one)

1 lb. fresh Asparagus, trimmed and coarsely chopped

1 c. Vegetable broth ( I used 2 Maggi Vegetarian Vegetable Bouillon Cubes

with 1 c. hot water)

1 garlic clove, minced

1 dash black pepper

1 c. 1% milk

 

Microwave the onion and butter covered in a large bowl, on HIGH for 2

minutes. Add Asparagus, vegetable broth, garlic and black pepper.

Microwave, covered, on HIGH for 10-12 minutes. Puree in blender.

Return the mixture to the Microwave safe bowl, stir in milk and microwave

until heated through.

Double the onion, add a Tbsp of dried dill, and thicken the milk a tad with

some flour. And you have my husbands favorite soup. I call it " Spring

Asparagus Soup " Even people who hate asparagus will love it!
