Guest guest Posted August 19, 2007 Report Share Posted August 19, 2007 Summer Squash Casserole 4 medium zucchini, sliced 4 medium yellow squash, sliced 1 stick (1/4 lb.) butter 1 medium onion, sliced Salt and ground black pepper, to taste Grated Parmesan cheese Melt butter in a medium sauce pan. Add onion and saute until clear. Add zucchini and squash. Salt and pepper, to taste. Cook 10 minutes, stirring ocassionally and then sprinkle with cheese. Cook another 10 minutes or until vegetables are done. Remove from heat and sprinkle with with cheese. Cover pan and let sit 5 minutes.
