I had a can of spiced fava beans in the pantry and a package of Asian eggplants, and some scallions, in the refrigerator. My wife came home with, among other things, a package of nice white potatoes, small ones. Inspiration! Make hay while the sun shines! A bird in the hand is worth two eggplants. I roughly diced the potatoes and fried them, seasoned with salt and pepper, in some PAM. I sliced the eggplants in chunks and when the potatoes were getting softer, I added the eggplant, and after a few minutes added the scallions. When the eggplant was reasonably cooked, I added the fava beans, stirred fitfully, and covered the pan again (throughout the frying I covered the pan).
